Hello! I am super excited that today is Thursday {one week 'til Thanksgiving!!?!}... so tomorrow is Friday!... and we are heading home next week! And can we just talk about how it's already a week until Thanksgiving?! Seriously. Time needs to slow down!
Anyways... I wanted to share a few of my favorite things right now. These are random. But good enough to share ;)
We shop at Trader Joe's a lot. It's like a smaller Whole Foods {sorta}, and it's less than a block from our apartment. Plus, they have a great selection for pretty great deals. Z and I joke that no matter how much we put in our basket, it's always less than $25... can't beat that! We currently love their $3 bottle of wine {seriously such a good deal!}... and here are a few other things I love to pick up when I'm there...
-I absolutely love these pita crisps! They're a little sweet, a little salty, and sooo yummy!!
- I also really love this tea. It's cinnamony {I know that's not a word... you get the idea though} and smells soo yummy. I think a hot cup of tea at night is so relaxing! Yummy!
Okay, another random thing I wanted to share is this recipe that I tried the other night. You should know first that Z has a few favorites that I make pretty often... we refer to them as the "rotation". I like to try new recipes, but it's not very often that a recipe gets added to the "rotation" ;) But this recipe was immediately deemed rotation worthy!! We both loved it, and I will be making it again soon! {In fact, I wish it was cooking right now for dinner, ha!} I saw the recipe on Pinterest a while back, but then a blogger that I love posted it on her blog. So I was convinced to give it a try...and I'm SO glad I did! It's from Kevin and Amanda. And Mom, this is the pasta I was just telling you about ;) I think dad will probably love it as much as Z!
{I included a few changes I made as well}
Spicy Sausage Pasta
1 tbsp olive oil
1 lb smoked sausage {I used 1/2 lb of smoked turkey kielbasa, and it was plenty of sausage}
1.5 cups diced onion {I used 1/2 medium onion}
2 cloves garlic, minced {I didn't have any... just used some garlic seasoning}
2 cups of low-sodium chicken broth
1 10 oz. can of Ro-Tel tomatoes, mild {I used the original, it was not too spicy}
1/2 cup of heavy cream {I used half-and-half, it was plenty creamy}
1/2 tsp of salt and pepper, each
8 oz penne pasta {I only had bow-tie}
1 cup Monterey Jack cheese, shredded
1/3 cup thinly sliced scallions {I omitted this ingredient!}
1. Add oil to an oven-safe skillet over med-high heat. Add sausage {thinly sliced} and onions and cook until lightly browned, about 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
2. Add broth, tomatoes, cream, pasta, salt and pepper and stir. Bring to a boil, cover skillet, and reduce heat to medium-low. Simmer until pasta is tender, about 15 minutes.
3. Remove skillet from heat and stir in 1/2 cup cheese. Top with remaining cheese and sprinkle with scallions. Broil until cheese is melted.
Looks yummy, right?! Go make this pasta, friends! And have a great week!

Recent Happenings...
Hi friends! Happy Monday. I took the day off today, so I'm just soaking up a morning at home, drinking coffee, and watching the Today show. Such a nice treat ;) Also, we're counting the days until we head home for Thanksgiving... one week and one day! Can't wait. In other news, here's a peek at what we've been up to lately...
-It snowed! We had a *dusting* of snow last week. I always love snow, so I kind of enjoyed seeing it... It did seem so strange to see snow on the fall leaves though!
-Yesterday we had an unusually stormy day {especially for late November}. It doesn't storm here much. I don't think we've ever had severe weather since moving here. And it's extremely rare to have storms once the colder seasons have arrived. But regardless we had strong storms and tornado warnings. Thankfully, the tornadoes were in the far south suburbs and surrounding cities. We did have pretty significant flooding on our street though...
-I've been pretty busy with work lately {hence the welcomed day off ;)}. I'm switching from the assistant teacher in the 3's and 4's classroom to a lead teacher in the pre-k after the Christmas break! I'm super excited but also a little overwhelmed and anxious. I've been lesson planning like crazy and staying later a good bit to get ready for my new position. {My hours will change from 9-2 to 8:30-5:30}. So that's been consuming a lot of my time lately ;)
-Z has also been busy with work. I do love when he takes a rare afternoon off for a coffee date or a trip to the gym together! We're both really looking forward to a few days off for Thanksgiving!
-I can't wait to decorate for Christmas!! We decided that we would stick with our tradition of getting a tree after Thanksgiving... mainly because I think it would die while we're gone next week! Also, it should be interesting to fit a Christmas tree in our 600 square foot apartment ;) I'll be sure to post some pictures!
-I'm trying to make a list of what we want to get everyone for Christmas... I think a little Christmas shopping is on my to-do list today!

Happy Monday and Other Random Things...
Hope you all had a lovely weekend! Ours was nice... pretty low-key. Friday we had a coffee date... my favorite. I love sitting and chatting with Z over a yummy cup of coffee... especially when it's cold and rainy. Perfect. Then we got Chinese take-out and cozied up at home. It was a really nice, relaxing night. Saturday, I met two girlfriends at Bang Bang Pie Shop... cutest little pie shop ever!! And the pie was ah-mazing. We all had biscuits and gravy {YUM!}, and we each got pie to go. So Z and I devoured our chocolate pie later that night ;) So.good. I also went with one of my friends to the new outlet malls in Chicago. It was a really fun afternoon. Got me thinking about all of the Christmas gifts I need to buy soon... eek! Saturday night, Z and I were feeling a little lost without a Bama game to watch... we ended up ordering a pizza and watching a few other games that were on tv. But we're already excited to watch the Tide this weekend! Sunday, we walked to church and then grabbed some yummy lunch at a little cafe near our apartment. {We totally were planning to eat leftover take-out food, but then I mentioned french fries, and we ended up getting sandwiches and fries instead, ha!} We also ran a few errands and watched a movie. And then somehow the weekend was over... crazy.
And also, somehow it's November?!?! So excited/ready to be heading home in a few weeks for Thanksgiving!
So here's what's on the menu at the Stokes house this week...
Monday- homemade chicken pot pie
Tuesday- homemade red beans and rice. I'm going to try this new recipe from Pearls Handcuffs and Happy Hour
Wednesday- I have professional development seminar... Z's having cereal ;)
Thursday- hamburger steaks with mashed potatoes
Friday- chicken burritos
We're also excited that Katie is coming to stay with us this weekend!! Can't wait!
And also, somehow it's November?!?! So excited/ready to be heading home in a few weeks for Thanksgiving!
